Online Cooking Class: Plant-Based Superfood Meal

Chef Stacy will teach you how to transform a bounty of plant-based superfoods into grab-and-go meals that are healthy, plant-based, immune-boosting, fresh, convenient, freezer-friendly and budget-friendly for the whole family, with healthy and easily accessible ingredients. Enjoy an array of vegan recipes that contain no sugar, are low-sodium, heart-healthy, low-glycemic and diabetic-friendly, loaded with vitamins, plant-based protein and fiber, and are zero-cholesterol, low in saturated fats and contain zero trans-fats. Chef Stacy will also discuss the many benefits of meal prepping in class.


Some of the recipes you can look forward to fresh fruit skewers with blackberry coulis, hearty kale and white bean soup, whole-grain vegetable lasagna and non-dairy raspberry chocolate chia pudding.

Hi. I liked the recipes but the prep instructions were vague especially when it came to the eggplant and zucchini. Too many recipes and not enough time to do it all well. It was a mad rush and that's not fun from my perspective.
