Balance cocoa, cream and oranges into a rich batter. Chef Stefano will teach you the key techniques to achieve soft texture and luscious layers. Plus, practice your pastry decorating skills as you finish the cake. Next, travel to Sardinia to make luxurious culurgiones. You'll make pasta dough from scratch and fill it with a creamy potato and ricotta mixture flavored with fresh herbs. - Pastry metal disk of 8-9 inches ø, OR 8 pastry metal disks of 3 inches ø OR same sizes silicon molds
- Baking paper
- Flat baking tray
- Sac a poche with tips
- 1 cooking pot of 8-10 inches ø
- 2 small pots of 5-6 inches ø each

Stefano was awesome! He not only talked us through the process, but answered all of our questions regarding ingredients, recipes etc. His knowledge in these areas was amazing. Our team enjoyed this very much and the food was delicious. We got in a good workout too rolling the pasta. Grazie mille Stefano!

Great class. We did this as a family get together from different states. Chef Stefano was amazing. This is a technical recipe & we definitely made mistakes. (Our mistakes- we didn't follow the directions correctly) Chef Stefano was patient & very knowledgeable. He was able to help us fix the issues we created & all of our tarts turned out AWESOME! We all had a great time. Thank you Chef!
