In this online cooking class, you’ll bring some of your favorite dishes from the "Great British Bake Off" into your very own home. Led by Chef Jennifer, you’ll be crafting classics like Victoria sandwich cakes with fresh raspberry jams and savory scones with traditional British condiments. And of course, no British treat is complete without a pot of English breakfast tea!

Victoria Sandwich Cake With Raspberry jam and Whipped Cream

Chef demonstrates each step and assists you as you perform each step.

Ingredients
Coarse salt and a peppermill
4 ½ cups all-purpose flour
1 cup granulated sugar
¼ cup confectioners’ sugar
2 tablespoons baking powder
1 teaspoon vanilla extract
3 large eggs, at room temperature
4 sticks unsalted butter, (3 sticks softened, 1 stick frozen)
1 ¼ cups whole milk
1 cup heavy cream
4 ounces goat cheese (chevre) or sharp cheddar cheese, plus more for serving with scones (optional)
1 small bunch rosemary or thyme (or dried)
½ cup good-quality seedless raspberry preserves
Branston Pickle or Major Grey's Chutney (optional, for scones)
Kitchen Equipment
Assorted mixing bowls
Measuring cups (liquid and dry) and measuring spoons
Two 8- or 9-inch round cake pans
Parchment paper or a silicone baking mat
Stand mixer with whisk attachment or electric hand mixer*
Cooling rack
Box grater
Bench scraper (optional)
Rubber spatula
Whisk
Offset spatula
*PLEASE NOTE: You will need a standing or hand-held electric mixer for this class in order to achieve the right texture on the Victoria Sandwich Cake. If you don't have one, plan ahead and borrow one (and pay that lovely person back with an excellent slice of cake!).

I highly recommend this class for anyone looking to learn proper technique using knives and the many different types and ways of cutting vegetables. Chef Jennifer was knowledgeable and answered any and all our questions. I learned a lot more than I thought I would from one lesson. Everyone enjoyed the soup I made! Looking forward to taking many more classes!!

I had such a good time learning how to make one of my favorite breakfast items, in my own kitchen! The instructor was fun and knowledgeable and she gave us some great tips and tricks! I highly recommend this!
