Cooking Class: Authentic Tortillas and Salsas in Oaxaca

Immerse yourself in Mexican cuisine during this engaging cooking class on your trip to Oaxaca. Led by Chef Luis, you'll learn how to transform homemade tortillas into traditional Mexican dishes. As you craft these authentic favorites, you'll learn about the history and cultural heritage of Oaxaca.


Begin the class by making tortillas from scratch with heirloom corn and limestone and cook them until golden brown. Next, chop fresh chilies, garlic tomatoes and red onion to make salsa roja, salsa verde and salsa de fruta. Then, whip up guacamole with avocados, onion and cilantro. Use your homemade tortillas to make a cheesy quesadilla with local cheese and squash blossoms. Next, make sopa de guías and aguas frescas with seasonal fruits to round out the meal. Finish on a sweet note with a traditional Oaxacan hot chocolate with almonds and cinnamon.
