Chef Paolo will share his techniques and knowledge to make a multi-course meal, starting with a selection of antipasti. Discover how to make a paper-thin beef carpaccio, Italian-style tartare and fresh buffalo mozzarella topped with tomato slices. Next, you'll learn the secrets to making the perfect creamy risotto with your choice of ingredients. Use fresh arugula, saffron and shrimp or earthy porcini mushrooms to flavor your risotto. Veal escalope serves as the meat course paired with either prosciutto and sage, a lemon sauce and other options. The meal concludes with a sweet, nutty and crunchy semifreddo al croccantino for a decadent dessert.
