Cooking Class: A Rustic Tuscan Feast in Lucca
Chef Paolo will teach you traditional recipes from Lucca to create a four-course feast in this cooking class.
The meal begins with a selection of antipasti. Combine toasted bread with tomatoes and dressing to make a refreshing panzanella, a Tuscan bread salad. Make crispy crostini topped with savory chicken liver and caper pâté and an earthy eggplant topping. Next, move to the pasta course and make homemade pasta dough. Roll out the dough and form tordelli stuffed with a vegetable filling. As the pasta boils, cook up a savory meat sauce to pair with it. For the meat course, make a tender pork loin seasoned with aromatic rosemary and sage and served with roasted potatoes. Finish the class with biscotti di prato, a famous Italian biscotti for a sweet dessert.
