You'll begin with an aperitivo of Chef Fred's homemade Italian pizza paired with a rich glass of wine. Next, craft pasta dough from scratch to make homemade tortelloni and tagliatelle pasta. Whip up a fresh sauce with cherry tomatos and basil to enjoy with the tortelloni. Then, make a traditional ragù alla Bolognese with savory meat and mix the tagliatelle in. Satisfy your sweet tooth with espresso soaked ladyfingers layered with mascarpone and cacao dust for a decadent tiramisù dessert. Along the way, enjoy wine pairings that will elevate the flavors.

Chef Federico is everything you could hope for.....a great host and teacher, he is kind and patient and he is lots of fun. I had a wonderful time! If in Bologna make sure you find the time for Federico's class!

Born and raised in Bologna, Chef Fred's culinary journey began at a young age, learning traditional family recipes and skills from his grandmother's kitchen and his father's butcher shop. After studying in the U.S and Australia, Chef Fred returned to Italy to continue his culinary journey. Each recipe that he crafts or teaches includes lessons learned around the world, with a special flare for traditional Italian flavors and methods.
