Begin the class with Basque pinchos, a variety of small snacks and appetizers. Skewer green olives and Guindilla peppers to make Gilda and cook up a savory chistorra sausage. Next, you'll make coca de recapte, a flatbread topped with olives, onion, escalivada and Spanish sausage.
