In this cooking class with Chef Katie, you will learn how to prepare an array of French pastries completely from scratch using high-quality ingredients and smart French pastry techniques.
Chef Katie will begin the class by teaching you how to prepare the pâte à choux dough, which you will then shape and transform into profiteroles, eclairs, and gougeres. Then, you will learn how to create an array of fillings and glazes, including a classic pastry cream, a luxurious and velvety mousseline sauce, a cheesy mornay sauce, and chocolate ganache.
Cooking Classes on Classpop! are designed to be social events that do not require any previous experience. Guests are welcome to purchase beer to enjoy during the class.

She is a great chef who is patient in teaching various baking techniques. However, some recipes done in class were not listed on the recipe page, but rather explained verbally afterwards, when asked upon request. The chef said it was completely alright to take pictures, but when I did during her demonstrations on more difficult or skilled techniques, she would block or cover her hands, suddenly move away, or stopped demonstrating the technique altogether, and refused to show the technique again. What the chef says does not match her actions in class. Outside of that odd experience, the chef seems to have a pleasant personality and teaches well if you do not take any pictures. So I give the class an overall 4 stars.

Chef Katie kicked off her culinary journey at the award-winning International Culinary Center in New York. From there, she refined her craft working in the kitchens of various esteemed restaurants throughout New York City. Today, Chef Katie works as a writer and culinary consultant in her Brooklyn bakeshop, where she offers interactive culinary experiences. Her recipes have been featured on hit cooking shows like Food Network's "Chopped" and "The Today Show."
