Chef Leon is ready to take you to the islands with this cooking class featuring the flavors and fragrances of Jamaica. Using a special blend of seasonings, you'll create a rub to flavor a variety of traditional recipes. For an appetizer, you'll combine cornmeal and flour to make a spicy jerk shrimp. Your entrée is jerk chicken with jasmine rice, kidney beans and coconut rice. For dessert, you'll prepare a batch of plantain fritters with spiced rum caramel sauce and heavy cream.
