Cooking Class: Extraordinary Creole Cuisine
This immersive cooking class brings the festive, vivacious Mardi Gras atmosphere to your kitchen. Chef Carlos will teach you how to utilize traditional ingredients — such as andouille sausage, orzo and toffee — to create incredible flavors. You’ll begin with a light micro green salad and tangy homemade lemon vinaigrette. For the main course, you’ll cook a New Orleans’ classic: Creole shrimp and spicy smoked sausage, served with roasted Brussels sprouts. To finish the meal, Chef Carlos will teach you how to make a delectable toffee bread pudding — a dish fit to satisfy any sweet tooth.

Chef Carlos is an entertaining and informative chef. He is very descriptive when showing you stop by step of his processes. He is so knowledgeable about food and you will definitely learn a lot working with him. You will certainly have a good time during his classes!
Chef Carlos is committed to teaching others how to create healthy meals for their friends and families. Educated as a pastry chef, Chef Carlos started a culinary temp service, opened his own restaurant and ran a food program for daycare centers in St. Louis. He currently works as an executive pastry chef handcrafting artisan breads, homemade graham crackers, Danish pastries, bagels, candy and more for guests and retail stores.
