In this plant-based cooking class, learn smart cooking techniques for making vegan fare as you prepare a flavor-forward Tex-Mex inspired meal. To begin, you'll prepare tortilla soup with jalapeños and black beans instead of chicken. Then, Chef Dominique will teach you how to make chickpea mole, a spicy dish that incorporates chocolate into the sauce and swaps out the traditional meat filling with chickpeas. Finally, you'll make a healthy yet flavorful dessert of chocolate chia pudding with fresh strawberries.
