Experience the flavors and textures of the tropics in this cooking class with Chef Vanessa. She'll teach you to create dishes that will awaken your senses to the magic of Afro-Caribbean cuisine! Enjoy a complimentary cheese board and tropical mocktails as you learn about regional traditions and techniques, Then, prepare intriguing sofrito, mojo and pique sauces, create crispy empanadas filled with meat or vegetables, mojo-seasoned chicken or tofu and toss together morro rice with black beans. For a truly Caribbean dessert, you'll whip up coconut tres leches corn cake.

The Staple Sauces: Sofrito, Mojo and Pique
With onion, garlic, green pepper, cilantro, chilis and vinegar
Meat or Vegetarian Empanadas
With ground pork, beef or chicken and Jamaican curried vegetables
Mojo and Garlic Chicken or Tofu
With sautéed onions and green pepper

With black beans and long-grain white rice

I had a great time working with Chef Vanessa. She has a lot of experience teaching classes and she did a great job explaining the process and techniques throughout our time together. She puts an emphasis on making cooking easier and more intuitive and after working with her I definitely feel like I am more comfortable in the kitchen. Her food is super fun and she's so friendly. I would highly recommend her to anyone in the area!
Chef Vanessa brings more than two decades of kitchen experience to her informative cooking courses. She's held many positions through the years, including distinguished pastry chef, wedding cake designer, holistic cook and culinary entrepreneur. She's especially passionate about mindful culinary practices, including farm-to-table cuisine and zero-waste cooking. Chef Vanessa currently offers interactive culinary experiences and is eager to share her enthusiasm for food with others.
