Dive into the art and science of pickling in this hands-on cooking class with Chef Myisha. You'll begin by preparing four different varieties of pickle, and then Chef Myisha will guide you as you cook up a show-stopping four-course menu that features each one.
Demystify the fermentation process as you master traditional kimchi, quick cucumber pickles using the hot pour-over method and seasonal pickled fruit. Let your pickles shine as you learn to dish up a bright quick pickle slaw with napa cabbage, kimchi roasted chicken served with crusty bread and spicy heirloom carrots with homemade hot sauce. Dessert is a mouthwatering fermented cherry crisp with vanilla ice cream.

Quick Pickle Slaw With
Napa cabbage, carrots, shallots, red bell peppers and dressing
Kimchi Roasted Chicken
With bacon, onions, garlic, tomatoes, olive oil and crusty bread
Spicy Heirloom Carrots
With homemade hot sauce, butter, black sea salt, brown sugar and parsley
Fermented Cherry Crisp
With vanilla ice cream

One of the reasons we take a cooking class is to find new recipes to try and make at home. Sadly, our instructor never provided the cooking instructions. I emailed her several times, and her responses were computer was broken, she was busy, etc. She finally mailed the recipe for just the dipping sauce, how about for the dumplings which were the main attraction? Or the broth for the dumplings which appeared to be a big deal? This was a unsatisfactory experience, which is a shame because we really wanted to like it.

It was a fun event and very informative. The only thing missing was a recipe sheet to bring home and take notes on during the class. Look forward to next week’s class.

She has worked as a sous chef, executive chef, and chef de cuisine in major cities across the country, and has been featured on local TV. Chef Myisha has also been a contestant on the Food Network twice, winning an episode of "Guy’s Grocery Games."
