Cooking Class: Contemporary Sushi Techniques

In this hands-on class with Chef Jocelyn, you'll have the opportunity to experience the time-honored Japanese traditions of sushi in a new light as you build a menu filled with contemporary and creative sushi dishes. 


You will begin with hamachi sashimi served with wasabi and yuzu, before moving onto a torched salmon sushi roll filled with cucumber and crispy garlic. You'll also learn how to prepare spicy hamachi rice poppers before ending on a sweet note with a decadent honey cake drizzled with a brown butter ginger glaze.


MENU


Hamachi Sashimi 

With soy sauce, yuzu vinaigrette and fresh wasabi


Torched Salmon Roll 

With cucumber, pickled daikon, ponzu and crispy garlic


Spicy Hamachi Rice Poppers 

With pickled chili, spicy mayonnaise and a crispy rice cake


Honey Cake 

With lime and a brown butter ginger glaze

It was clear that Chef Jocelyn was an experienced professional from the beginning of our class. She taught me a lot of restaurant techniques I had never heard of before to totally elevate even simple dishes and I'll definitely be using her tips in my future cooking. Her food is beautiful and she explains everything from choosing the best ingredients, to unique methods she recommends, to plating choices.
