You'll begin by mastering perfectly seared sea scallops with citrus-fennel salad and fresh herb sauce verte. Next, you'll create tangy and spicy tequila clams with lime, cilantro and serrano peppers. You'll also learn how to prepare a sticky and sweet miso-glazed salmon with sticky rice and ginger stir-fried greens. For dessert, you'll satisfy your sweet tooth with a creamy, salted caramel sous vide cheesecake.

I learned so much from Chef Patrick in our short amount of time together, from how to make fresh mozzarella to the best way to cut fish. He was an excellent instructor, answering questions in detail and with enthusiasm. Every dish was delicious and beautifully executed. Highly recommended.
