Travel beyond the Italian favorites you know so well and discover the unique regional tastes of the Province of Catania in Sicily, with Chef Rudy as your attentive guide. First, you’ll learn to prepare Caponata Catanese, an exciting sweet-and-sour eggplant dish. Then, it's onward to casarecce alla Norma, a handmade pasta served with eggplant, tomatoes, basil, and ricotta salata. And your journey comes to a sweet, satisfying close with traditional cannoli made with ricotta, candied fruit and pistachios.

With more than 20 years of cooking experience, Chef Rudy has served in a wide variety of culinary capacities. He served as the Executive Head Chef and Owner of a Mediterranean and farm-to-table restaurant. His kitchen skills include developing menus and meals that follow dietary and cultural guidelines. Chef Rudy looks forward to sharing his life-long love of cooking and culinary knowledge with his guests.Â
