Cooking Class: Indulgent Vegan Feast With Chef Mary

Begin the class by practicing your knife skills to chop fresh vegetables. Then, learn the technique to rolling them in rice paper to make refreshing vegan summer rolls. Plus, whip up a savory dipping sauce to enjoy alongside the summer rolls. Next, you'll have an option for your main course. Make a vegan version of one of your favorite comfort foods. Use dairy-free cheese, wild mushrooms and vegan pasta to make a decadent mac and cheese. Or make an earthy and hearty mushroom stroganoff with wild mushrooms and vegan pasta. End the meal on a sweet note by transforming aquafaba, cacao and vanilla into a decadent chocolate mousse for dessert.
