Dive into the flavors of Cajun cuisine in this hands-on cooking class led by Chef Timothy.
Under his expert guidance, you'll learn the authentic techniques to craft a three-course Cajun meal. Begin the class by cooking up savory andouille sausage and chopping carrots, celery and onion for a mirepoix. Combine it all in a big pot with rice, broth and wine to make an authentic gumbo bursting with flavor. Next, learn the secrets to making the perfect étouffée. Cook up a rich lobster or fresh salmon to serve over Cajun dirty rice seasoned with aromatic herbs and filled with mirepoix vegetables. You'll have your choice of two desserts to end the meal. The first option is classic pralines, chopped pecans in a spiced candy base or whip up a fluffy king's cake topped with a rich cinnamon frosting.

This was the first time that my wife and I had taken a cooking course. There was virtually no instruction unless you were one of the lucky ones around the table that happened to be in front of him while he demonstrated. The resulting product was not really edible. The rice was a mushy mess. The whole time the class felt rushed and disorganized.
