Take a culinary journey to Peru in this immersive cooking class.
Chef Timothy will teach you the time-honored recipes and techniques to craft authentic Peruvian dishes. The class begins with a traditional ceviche. Marinate fresh fish with citrus, cilantro and ginger and combine with Peruvian corn and sweet potato for a tangy appetizer to start your meal. Next, boil lobsters and serve with a mirepoix Béchamel sauce and chimichurri butter. Finish with Parmesan cheese and herbs for a decadent lobster thermidor. Cook up fluffy rice in seasoned stock to make a seafood paella with Peruvian flare filled with fresh shellfish and fish. Whip up a fresh meringue for a fluffy soufflé or a rich lùcama sorbet made with honey for a decadent dessert to end the meal.

Peruvian Lobster Thermidor
With live lobster to-boil, Peruvian mirepoix Béchamel sauce, Peruvian chimichurri butter, Parmesan cheese and herbs
Peruvian Seafood Paella
With rice, seasoned stock, citrus juice, shellfish or fish, cilantro, spices and tomato paste

Lùcama Sorbet
With Lùcama pulp, ice, sugar, honey and choice of frozen berry
Soufflé
With meringue, egg yolks, spices, lemon and vanilla paste

This was the first time that my wife and I had taken a cooking course. There was virtually no instruction unless you were one of the lucky ones around the table that happened to be in front of him while he demonstrated. The resulting product was not really edible. The rice was a mushy mess. The whole time the class felt rushed and disorganized.

Chef was great but the food was not great quality and the rice was cooked weird.

Absolutely loved this class. Chef Timothy was very knowledgeable and informative. It was just a really cool and unique experience. The sushi was also delicious! :)

With past experience that includes teaching cooking classes for kids and working as a private chef, Chef Timothy is an engaging teacher for all ages and skill levels.
