Harness the power of vegetables in this vibrant cooking class. Chef Bey will teach you how to make sushi and tacos using fresh ingredients. Begin by making the rice for the sushi. Add seaweed and chopped avocado, carrots, ginger and cucumber to fill your rolls. Then, learn the techniques to properly roll sushi. Make curried plantain with cardamon and Chinese five-spice to serve on the side. Combine beats with chickpea flour, shallots and paprika. Add the filling to blue corn tortillas and add a squeeze of lemon and lime for the finishing touch.

With sushi rice, seaweed, rice vinegar, avocado, cucumber, carrots, red bell pepper, bamboo shoots, spinach and ginger
Beet "Meat" Tacos
With beets, chickpea flour, blue corn tortillas, cilantro, lime and seasoning
Fried Plantain Filling
With plantains, curry powder, coconut cream and Chinese five-spice

I attended the Vegan Crab Cake Pasta class along with my husband and we had an enjoyable time. Chef Bey delivered a very intimate culinary experience. He is knowledgeable on the various foods and spices, origins and the benefits. He is also very respectful of his guests dietary needs as we enjoyed a very tasty, low sodium meal. There was no pasta but he substituted a delicious rice that was dyed blue from a flower that has amazing benefits for the body. There was hands-on as we cut and diced the vegetables and mixed seasonings. However, I would have loved to handle preparing the meal from beginning to end (not to deter anyone but I love to cook) but maybe that was his way of making sure the meal was perfect and it was. Thank you so much, Chef Bey! I’ll be keeping an eye out for another wonderful experience.
