You'll learn to roast fresh beets to tender perfection and use them to top zesty arugula with orange slices and goat cheese sharing the plate. Then, prepare a zingy green garden dressing sweetened with honey and orange juice and garnish your finished salad with crunchy pistachios and fresh herbs for a plant-centered feast you'll devour.
