Cooking Class: Mastering the Art of Chocolate

You'll feel like a true chocolatier in this hands-on cooking class. Chef Frederick will teach you how to make delicious chocolate treats while teaching you essential techniques for working with chocolate. First, make a cinnamon-spiced brigadeiro sweetened with agave and a little spice from cayenne. You'll work with cacao butter and cacao powder to give this treat a rich chocolatey flavor. Next, make a classic hazelnut fudge using cacao butter and cacao powder. Add in hazelnuts for a little bit of a crunch.

The chef was a nice guy, but the experience was underwhelming and totally overpriced for what it was. We met in the back of a noisy brew pub on valentines with 24 people crowded around a small table to follow a simple recipe that just involved measuring and blending ingredients in a blender. There were only three blenders and one set of measuring cups for everyone. For $140, each couple should have had their own space and tools, have been able to select the type of chocolate they wanted to prepare instead of having it assigned, and have left with a chocolate they made themselves. Instead it was a crowded mess leaving us thinking we could have had a far better and less expensive time just finding a recipe online, buying the ingredients, and making chocolate at home.
