Expand your culinary horizons with this hands-on Indo-Caribbean cooking class. Using time-honored culinary techniques, Chef Karmala will guide you through recipes and dishes sure to warm your heart as well as your belly! You’ll start by learning how to get the perfect caramelization on plantains for a plantain toast on whole grain bread with avocado, market greens and feta cheese. You’ll then try your hand at a traditional West Indian curry chicken. Next you’ll blend sweet and spicy with coconut rice and peas with scotch bonnet peppers. Finally, you’ll enjoy a spiced raisin donuts called Gulgula.

West Indian Curry Chicken
With hot curry powder, scallions, garlic and scotch bonnet peppers
Coconut Rice and Peas
With fresh thyme and scotch bonnet peppers
Gulgula (Spiced Raisin Donuts)
With jaggery, warm spices and vanilla

Chef Karmala was a great night/experience. She was very prepared and knowledgeable! She encouraged questions about anything cooking wise which I enjoyed. The food was amazing as well!! It was spicy but it gave the experience that much more fun lol We all had fun during every step of the menu! Definitely recommend her for more that just this class, but for special occasions as well!

The chef is nice but things didn’t quite work out as planned (the fitness didn’t work) so the class was very short and focused primarily on decorating pavlova.

I took one of Mala's class and I learnt so much and enjoyed the whole thing that I signed up for more of her classes. She is very knowledgeable and well organized and she jokes throughout which makes you feel at home and relaxed. I highly recommend her classes.
