Cooking Class: Classics From Northern Italy

Discover the wonders of regional Italian cuisine in this hands-on cooking class where every dish is a delicious destination. You'll work with Chef Peter to learn the distinctive contributions this region has made to the Great Italian Cookbook. Begin by crafting a traditional hot sauce called bagna cauda, filled with vegetables served with fresh focaccia, before preparing a lamb ragu Bolognese richly flavored with laurel leaves and red wine. You'll also prepare a regional polenta dish perfumed with fresh herbs and whip up a creamy panna cotta topped with fresh fruit for dessert.

Bagna Cauda

With celery, fennel, garlic, olive oil, grilled focaccia, baby carrots, asparagus and mushrooms


Ragu Alla Bolognese

With beef, lamb, veal, garlic, tomatoes, beef stock red wine and laurel


Polenta Concia Alla Valdostana

With rosemary, oregano, vegetable broth, cream, and fontina, Parmesan and toma cheeses


Panna Cotta and Seasonal Fruit

With cream, milk, agar agar and salt
