Cooking Class: A Taste of the Caribbean Islands

In this tropical fare-inspired cooking class, Chef JR will take you on an interactive adventure to discover how to create the Caribbean’s most iconic dishes from scratch. Start by poaching shrimp for ceviche with an exotic touch from mango and serrano chilis. Then, learn how to expertly roast mojo chicken seasoned with a blend of citrus juice, garlic and oregano, and cook rice with red kidney beans, coconut milk and scallions. Finish by rolling guava jelly and cream cheese into puff pastry sheets then baking for the perfect crispy dessert.

Chef taught us how to make a pineapple cashew fried rice with curried chicken and talked us through how important it is to have everything prepped in Asian cooking especially when cooking in a wok. He even laid out a chart showing which order things can go in, and he explained everything about the order while teaching the dish.
