Cooking Class: Mexican Flavor Fiesta

Chef Mary Jane takes to the kitchen to show you to do Mexican cuisine right in this flavorful hands-on cooking class. Discover the time-honored techniques used in kitchens throughout the region to craft an array of beloved recipes. Begin your session by exploring the magic of cooking with citrus by making fresh shrimp ceviche. Then, assemble a batch of tamales filled with tender pork and plump black beans, topped with a zesty tomatillo sauce. Slice up zucchini and onions and finish them off with cotija for a bold side dish and learn the secrets of baking a creamy flan topped with raspberries for dessert.

Chef Mary Jane’s expertise in pasta-making shone through, as she patiently guided us through each step of the process. From mixing and kneading the dough to rolling it out and creating beautiful pasta shapes. I not only learned the art of making fettuccini, ravioli, and tortellini but also discover the magic of the roasted butternut squash filling. After the class I feel more confident in my pasta making skills.
