Many tasty French dishes come prepared in an even tastier mother sauce and in this cooking class with Chef Henry, you’ll learn how make three: béarnaise, bordelaise and béchamel. The “child” sauce of hollandaise, béarnaise, requires a compound butter with herbal aromatics. The bordelaise involves simmering red wine in butter for a dish of full body flavor. And the béchamel entails whisking milk and butter into a decadent roux. There’s a reason French chefs have prepared these sauces since the 19th century and there’s a reason you should make them: they’re delicious.

Steamed Asparagus and Béarnaise
With egg yolks, tarragon, shallots, peppercorns, clarified butter and crispy shallots
Pan-Seared Flat Iron Steak and Bordelaise
With wild arugula, demi-glace, brandy, peppercorns and vinaigrette
Potato au Gratin Using Béchamel
With cream, nutmeg, flour, butter, fresh thyme and garlic
Tarte Tatin, Whipped Cream and Two Dessert Sauces
With puff pastry, apples, sugar, heavy cream and vanilla bean

Chef Matt is really passionate about using local and sustainable ingredients. Explained everything really clearly. Gave loads of helpful general cooking tips. Cleaned as he went and explained while he was doing it. Said 'an ounce of sauce covers a pound of sin' which is the sort of advice I need! Finished dish looked incredible, restaurant quality for sure and clearly has loads of teaching experience.
