Join Chef Jimmy to learn the secrets of fresh pasta-making in a fun-filled cooking class! You'll learn how to make a mouthwatering, Southern-style eggless pasta called pasta bianca.
After combining your ingredients to make pasta dough, Chef Jimmy will guide you through creating an assortment of pasta shapes including cavatelli, gnocchetti sardi and orecchiette. Next, whip up a slew of tasty sauces using farm-fresh ingredients. Paired with your choice of sauce, this pasta class is sure to please!

Jimmy was super funny and we had a great time. We came for my friend’s birthday and it was a cute little moment for us. I would recommend eating beforehand because you end up eating the dumplings at 7:30pm

Chef Jimmy was great. Knowledgeable, hands on and didn't waste time. Our dumplings were delicious and the sauce was 🤌🏾. Highly recommend it for a good time. And now we can make our own dumplings!

Class felt rushed. Prep work was not completed ahead of time and participants only ended up having about 25 minutes to attempt making (and eating) their sushi rolls, and there weren't enough stations for each participant so we had to share and wait for others to finish. My group still had fun and learned some new things so overall it was a good evening but my expectations were definitely higher.

Efficient presentation, very good tips for success. This class (dumplings) does not allow enough time for participants to actually engage in all the steps associated with the production. Under the 2 hour limit Jimmy was not able to let the class members assemble the dough or prep the fillings/dipping sauce.

Chef Jimmy was so knowledgeable and did a great job of making the class accessible to all those who attended! We not only learned how to roll sushi, but also were told where to get the best & most affordable ingredients and supplies in the Portland area so that we could take our skills home with us. Highly recommend this class and any other that Chef Jimmy teaches. Cannot wait to sign up for another one!

We were unable to have the class in the normal place, so class was a bit cramped and crowded. Chef Jimmy was very knowledgeable and made the best of an unusual circumstance.

Chef Jimmy did a great job working around an unideal working change, due to a last minute venue change. We had a big group, and he managed us well. I wish there had been the possibility of more hands-on for the prep work, but the sushi-rolling itself went really really well.

While Chef Jimmy was nice enough this class is not what is depicted in the description on the website! The class was overbooked, located in an open area/back room of a brewery with no commercial kitchen or setup to be found. It was very unsanitary, and unfortunately chef Jimmy seemed flustered and rushed because all of his cooking utensils and ingredients were in bags and boxes in a corner. He had to keep going back to retrieve them because there was no space for him to have everything laid out. We barely made pasta and did not make any sauces as they were all premade. Everyone in class threw their pasta they made into the same pot (only one pot available and heated on a hot pad) and were expected to eat who’s ever came out; half the people didn’t even wash their hands or wear gloves! If you’re looking for a true cooking experience DO NOT BOOK THIS CLASS!!! Hopefully they take this feedback and make some changes!

Chef was a real cool guy, very friendly, the class on the other hand felt lacking. Half of it was spent chatting more then hands on food making. I feel like the rice prep should have been shown but had a bowl already made to get into it quicker. Once we were taught how to make the sushi by first watching, it would’ve been nice to make it again all together as we watched him make it so we could follow the steps more efficiently instead of being shown once per style. If there were any extra time after, we could make some ourselves without instruction and or eat what was made after or during the class depending on remaining time.

Class size was way overbooked. Instructor was not prepared. Location was not sanitary. Instructor was irritable and annoyed by people being chatty and trying to have fun. Supposed to be a 2 hour event but at the 2 hour and 20 minute mark we had to leave and the water to boil our pasta in was still barely warm. No one had their pasta cooked at that point and there were 26 people in the class needing their pasta cooked. Paid $240 for 4 of us and left very disappointed and frustrated. Overall experience was unprofessional and not worth the money we paid. Definitely would not want to book this experience again. I read reviews before signing up and am so confused by the positive reviews of this instructor and class. Especially as his “assistant” stated this is how he is in all his classes. Rude and unfriendly. :(

Wasn’t prepared for the class as he was missing a lot of equipment for the group, and we didn’t even get to cook the pasta at the end of the night and eat anything. I understand everyone has a bad night, but not being prepared when people paid their hard earned money for the class was unprofessional.

Chef Jimmy was the best! Our team used his class as a team-building event and it was a big success. Jimmy was very fun and engaging and everyone enjoyed learning a new skill. Plus, at the end of the class, we had a great time eating all of our sushi creations. I would highly recommend this class.

I really wanted to like this experience. Chef Jimmy seems like a decent guy, but he was disorganized and treated us like we were in high school. I did enjoy the process of making the dough and cutting the pasta, but unfortunately the equipment failed and we were not able to cook anything. We were sent home with our pasta in plastic wrap and sauce in cups for us to cook at home. Not what I signed up for!

Jimmy was fantastic! He was well-prepared, and he made the class fun and educational. We learned HOW to make pasta, but also WHY certain steps were important, along with some history as well. He was also willing to share his recommendations for local restaurants and help us think about other class options! Lastly, he was very flexible when we had to make last-minute adjustments. My partner and I loved this class! Chef Jimmy provided instruction at a pace that was enjoyable for all levels of experience. You have time to be independent as well as work directly with him. He was incredibly thoughtful and generous and even brought treats from his international travels. Overall, a delicious experience!

This was an incredible Class! I was worried that I have very limited cooking experience but the chef did an amazing job of walking us through step by step! It was a great balance of cooking, learning, and having a great time. I can’t wait to take another cooking Class.

Chef Jimmys class was excellent! We had so much fun starting the class right away with making the dough. As we waited for the dough to rest, he shared with us the history of pasta and it’s origin. Very interesting! We had three different types of pasta to make! Fettuccine, Angel Hair, and Bow Tie!! Bow Tie was pretty popular! We were able to have some drinks and mingle while the pasta was cooking. Choosing between three sauces was challenging… so we chose all three! Basil Pesto, Pepper, and Carbonara. So delicious and so worth the experience!

This was a great class. Chef Jimmy is a fantastic instructor. He gave a lot of great information about sushi as well as places to eat and buy sushi-grade fish and other sushi ingredients. I would definitely recommend this class. I am looking forward to taking one of his other classes.

It was a fun class. Lots to learn in one class but a good starting point. Throughout the class chef jimmy said he will send you a document that has all the info, and you didn’t need to take notes. It was never sent to us. I tried contacting class pop but heard nothing back.

We really enjoyed the class! So much so, that we signed up for another one of Chef Jimmy’s classes. It was fun, interesting, and tasty! We are so excited to try what we learned at home. One suggestion is, arrive a little early. We had trouble locating the class at this particular location and there wasn’t signage so we were a few minutes late. Chef Jimmy was great about filling us in on the few details we missed and wonderful about answering questions throughout.

This was a really fun experience, we both enjoyed it and learned a lot! We are gonna be getting these tools and practicing at home. The sage and brown butter sauce on ravioli was my favorite of the day! Fun to experiment with cutting out different shapes and laminating dough.

Maybe I watch too many rom-coms, or I had different expectations in my head…it was a weird start…everything was premade…we paid 60 dollars to cut up pasta pieces and eat the pasta in lukewarm pasta water. Bruh. It was like a YouTube went 4D.

Very good teacher. He’s very patient. He gives you lots of time to practice class with his preprepared ingredients. Don’t think that the first time you try to roll sushi that it’s going to be perfect. Everyone has a different starting point and “failures” are as much a part of learning as successes are (said the school teacher).

Chef Jimmy was actually the best part of this whole dealio. Super nice guy very fun to work with. It was the location and the actual food that took the other two stars away. This is most definitely for novice and and beginner sushi makers "and" lovers. The reality is that it's tough to make good sushi especially in a class environment. We did learn a few new cool tricks which probably would have given 4 stars but the bar setting probably isn't the best for this type of class. We still had fun and met some interesting people. If you're just beginning into sushi and want to learn a bit about it and how to make basic rolls this would be a good class for you.

Fun class! Chef Jimmy gave very clear instructions and simplified the process. Loved that it was so hands on. Four stars just because of the location- at times it was hard to hear over the loud music being played at the restaurant.

Chef Jimmy was prepared and knowledgeable. He made the best of the situation and space. However, I would not classify our session as a "cooking class" which is what I was expecting. It was more like a cooking demonstration with an opportunity to fold the pasta before it was cooked. Although I was emailed the recipes for the food that was prepared for me and my friends a day or two after the session, I would not say I am confident about preparing the dishes on my own.

We had a lot of fun! Jimmy was very knowledgable on pasta. I would definitely take a class again. That being said, I only gave 3 stars because the facility was not conducive to the size of the class. We had to partner and triple up with other groups; that felt a little strange to be handling someone else's pasta. Jimmy seemed a little unorganized. He had forgotten one of his pasta attachments, so 16-18 people had to share one device. This took a while, so we didn't get to make the sauces that were listed on the class description. Basically we made and boiled pasta. We ate it on pieces of wax paper because there were not any paper plates and there weren't enough forks for everyone. We all have off nights; maybe this was one of them. But, this does not prevent me from trying again! We are looking forward to trying to make our own pasta at home.

It was a great class with alot of good information. Unfortunately, we seemed to run out of time. I think that either extending by 30min or capping the amount of people at 15 would greatly help the experience, especially because you can't anticipate the amount of questions, but I feel as though that would give a more personalized experience for the entire group. Chef Jimmy had a great attitude and was great to spend time with.

Chef Jimmy was not just a high school chef mentor for me, he was the chef mentor for me. Chef Jimmy is by far one of the most experienced culinary instructors I have ever encountered. As an instructor, I find that Chef encompasses the right amount of patience, skill, knowledge, and enthusiasm it takes to teach a class or 1-on-1. He is a pleasure to learn from and has a great sense of humor. Learning a new skill or recipe can be daunting but if Chef Jimmy is teaching, he makes it easy and fun.
Meet your chef
After completing military service, Chef Jimmy enrolled in culinary school. Upon completion of his culinary apprenticeship, he earned the title of "certified culinarian" from the American Culinary Federation. He then went on to work at some of the most prestigious properties in the country, including the Ritz Carlton Hotel and the Allison to name a few. He also acted as a culinary instructor at the secondary and post-secondary levels. In 2013, Chef was deemed one of the "Best Chefs in Louisiana" and voted among his chef peers as a "young gun".
