Cooking Class: Learn to Make Pasta Like an Italian

Learn to make handmade pasta any nonna would be proud to call their own in this hands-on Italian cooking class with Chef Chad! Pasta-making is known as being a labor of love, but the easy techniques you'll learn in this experience will have you turning out batches of fresh pasta in no time.
Begin by kneading together a traditional egg-based pasta dough, then rolling it into sheets from which you'll form scarpinocc, a dumpling whose shape is said to resemble a wooden shoe. Chef Chad will teach you how to fill and fold each dumpling with Taleggio, a creamy Italian cheese similar to Brie. Next, you'll create a rustic broth from butter, cream and parmesan to summer your scarpinocc in. As a complement to all these decadent flavors, toss together a simple arugula salad with toasted walnuts and balsamic vinegar.

Chad did such an amazing job at my birthday party. The food was delicious -- homemade pasta, gorgeous sauces, and perfectly cooked meat. Everything tasted so good, and Chad presented it beautifully

We enjoyed an incredibly fresh and thoughtfully prepared meal. With each dish, there was an explanation as to where he sourced the ingredients from, why and how he got the inspiration for it. You might think pork ragu doesn't bode well for a summer's evening, but the way it was prepared was to make it feel lighter and I'm just mad that I didn't ask for more!
For Chef Chad, cooking has been an adventure through the culinary industry. His experiences have taken him through the Chicago area, with roles as sous chef, chef de cuisine and instructor. He has created menus and prepared food in intimate settings and for groups of 1400 diners. Putting his kitchen talents to use for others, Chef Chad finds his greatest reward in teaching home cooks how to create their own delicious dishes.
