Cooking Class: Four-Course Pacific Northwest Menu

The culture and cuisine of the Pacific Northwest are the highlight of this hands-on cooking class. Chef Vish guides you through a four-course menu filled with the high-quality ingredients of the region. First up is salt-baked carrots with carrot top pesto, Parmesan, pumpkin seeds and honey. Your entrée is fennel crusted salmon with wild mushrooms, leeks and paprika served with a side of roasted squash with du puy lentils, mint and whipped yogurt. Dessert is chocolate and berries with cream and cinnamon.

Salt Baked Carrots
With carrot top pesto, Parmesan, pumpkin seeds and honey


Fennel Crusted Salmon
With wild mushrooms, onions, garlic, leeks, paprika and lemon


Roasted Squash
With du puy lentils, pomegranates, whipped yogurt, mint and parsley


Chocolate and Berries
With cream, cinnamon and icing sugar
