Level up your taco night game in this hands-on Mexican cooking class with Chef Luis. First, you'll learn the time-honored techniques for creating authentic Mexican tortillas from scratch with masa harina, water and salt. Then, you'll learn the perfect balance of heat and tang with a refreshing xnipec salsa featuring crisp pickled onions and habanero pepper. Finally, you'll make cochinita pibil, a traditional Mexican dish with pork roast as the centerpiece, complemented by the flavors of achiote paste, orange juice, lime juice and Mexican oregano.

Chef Luis taught me how to properly chop an onion safely while also having even pieces. I learned a good tip from him in order to cry less during chopping by always using a very sharp knife. This is crucial in order to not release the gasses of the onion. I will definitely be using his tips and tricks in my home kitchen.
